Camu Camu Coconut Lemon Cheesecake
- 1 cup unsweetened shredded coconut
- 7 pitted dates
- 1/2 cup pecans
- 1/2 cup almond meal
- 2 tbsp water
- 1 1/2 raw cashew (soaked overnight)
- 1/4/cup coconut oil
- 1 lemon zest and juice
- 1/4 cup coconut nectar
- 1 1/2 SGFYF Camu Camu powder
Combining all dry ingredient for the base in a food processor until crumbly. Add the water, in small amounts, until sticky dough forms. Press base into a 9” silicone cake pan, or tart, food rings of your choice. Refrigerate while the filling is being prepared.
In a high-speed blender, combine cashews with coconut oil and lemon juice until smooth. This may take more than a few minutes, scraping down the sides as you go. Once smooth, add honey, zest, and SGFYF Camu Camu powder, blending again for 30 seconds until well combined.
Pour filling into molds and freeze for two hours. Once set, remove and allow to come to room temperature. Top with additional lemon zest, and a slice of lemon if desired.
Camu Camu Smoothie
- 1/2 tsp SGFYF Camu Camu powder
- 1 tsp SGFYF Maca powder
- 1 tbsp SGFYF Chia Seed
- 1/2 banana
- 1/2 frozen blueberries
- 1/2 cup ice
- 1 tsp agave syrup
- 1/4 cup coconut cream
- 1/2 cup almond milk
- vanilla beans to taste
Add all ingredients to blender and enjoy.
